Chef with Michelin cred opens One Fish Raw Bar in Campbell

After years of honing his skills at Boston’s Uni, the two-Michelin-starred Atelier Crenn in San Francisco and Los Gatos’ highly regarded Lexington House, chef Trent Lidgey has struck out on his own.

His eclectic, much-anticipated One Fish Raw Bar has opened in downtown Campbell.

Highlights on the Raw side of the inaugural menu — which will change daily, based on seafood availability and seasonal produce — include Ora King Salmon drizzled with black garlic molasses and salsa, Hamachi with pineapple, avocado and Thai herbs; Siberian and Osetra caviar; and of course, oysters.

The Cooked side? A Lobster Roll served with lemon mayo on a Parker House bun; Chinese sausage and kim chi fashioned into a Pig in a Blanket; and Branzino with shitake.

Dessert is also seasonal. For early autumn, there’s Apple Pie with Japanese brown sugar and an Oat Panna Cotta with figs and pomegranate.

The extensive wine and Champagne list skews Californian and French. Diners will also find two sakes from Japan and three Bay Area beers on tap.
